Oven-Roasted Tomatoes

12 Roma tomatoes

1/4 cup Olive oil

Kosher salt

Cut the tomatoes in half lengthwise. Toss them in a large bowl with the oil. Allow them to sit for 1 hour. Pre-heat the oven to 225. Place the tomatoes cut side up on a cookie sheet (that has been covered with foil). Sprinkle lightly with salt. Bake for 1-2 hours (or until tender). Allow to cool before serving. Makes 24
