Old-Fashioned Roast Beef

About 8 servings

One 4-pound beef bottom round roast
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
OR 1 teaspoon minced garlic
1/2 teaspoon onion powder
1 teaspoon paprika

  1. Preheat the oven to 400°F. Place the roast fat side up on a roasting rack that has been coated with nonstick cooking spray. Place the rack in a large roasting pan.

  2. In a small bowl, combine the remaining ingredients; mix well. Rub the spice mixture over the entire roast, covering completely. Roast for 30 minutes.

  3. Reduce the oven to 300°F. and continue roasting the beef until a meat thermometer registers 150°F. for medium-rare, or until desired doneness beyond that.
