Low-Fat Deviled Eggs

Many people stay away from eggs because of cholesterol and

fat. Eggs are a wonderful source of protein, so three or

four per week will probably not hurt your diet too much. However, you can make some low-fat dishes using eggs. Here is a mock deviled egg recipe.

1 dozen hard boiled eggs (discard yolks)

1 8-oz carton egg substitute

1/8 tsp. celery salt

1 to 2 Tbl. sweet pickle relish (Optional)

1 to 2 Tbl. mustard

1/4 cup fat free mayonnaise or salad dressing

In a non-stick skillet, cook egg substitute until set. When

egg is completely cooled, chop or dice and place in a

mixing bowl. Add remaining ingredients, mix well and fill

egg whites. Sprinkle with paprika and refrigerate until

ready to use.
