Jamaican-Style Griddle Biscuits

2 cups Flour

2 teaspoons Baking powder

1/2 teaspoon Salt

1/2 cup Water

2 teaspoons Oil

2 teaspoons Sugar

Sift together the flour, baking powder and salt. Set aside. In a separate bowl, blend the water, oil and sugar. Stir into the dry mixture. Roll out the dough on a floured board (to about 1/4- to 1/2-inch thick). Cut out 2-inch circles. Heat a griddle (or heavy

skillet) over medium heat. Lightly oil before each addition of biscuits. Cook the biscuits until golden brown (about 3-4 minutes a side). Serve warm. Makes 12-15
