Grilled Chicken Kabobs

A good low-fat dish to throw on the grill this summer is Chicken Kabobs. You will need about one chicken breast per person. This recipe serves 4.

4 boneless, skinned chicken breasts cut into cubes

1 can pineapple chunks packaged in juice

1 green pepper

1 red pepper

1 yellow squash or Zucchini (optional)

1 cup teriyaki sauce

4 tbsp. Brown sugar

cherry tomatoes

Mix brown sugar, pineapple juice from the can, and teriyaki sauce. Reserve about 1/4 of the sauce. Cut chicken into chunks and marinate in the mixture in a covered bowl or zip-lock bag for about three hours. On a skewer, alternate pieces of chicken and vegetables Grill for about 20 minutes or until chicken is done. Baste frequently with reserved sauce while grilling.
