Chile On Baked Sweet Potato

Bake a sweet potato -- oven or microwave

Split it open and top with this chili concoction:

Use whatever chili you like, even canned. When you heat it, mix in:

1 can black beans

1 can Mexican spiced diced tomatoes (with jalapeno bits)

Top the baked sweet potato with the chili mix, and then add a dollop of vegan sour cream type topping.
